My name is Katie Enwright, and I’m the founder of Amanu Health.
Throughout my career—and through my own experiences—I’ve seen firsthand where our healthcare system can fall short. Insurance claims are denied, leading to unexpected and ongoing expenses. Appointments can take weeks or months to schedule, and when you finally meet with a provider, the time often feels limited. While medications are sometimes necessary, there are also instances where simple, sustainable lifestyle changes can help address the root of a problem.
As a registered dietitian, I created Amanu Health to help people use food and lifestyle changes as powerful tools for better health. My goal is to provide evidence-based, personalized guidance that can help reduce your reliance on medications when appropriate—and minimize the time, stress, and uncertainty that often come with navigating the healthcare system. With small, manageable changes to your nutrition and daily routines, you can feel more confident and supported in your health journey.
A little more about me:
I’m a Colorado native, born and raised in the suburbs of Denver. I attended Metropolitan State University of Denver, where I earned a Bachelor of Science in Human Nutrition and Dietetics. I then went on to complete a master’s degree in Dietetics at Concordia College in Moorhead, Minnesota.
I have been blessed to work in multiple areas of nutrition including clinical and wellness settings with a particular focus on cancer care. I’ve always been drawn to supporting people with cancer, and over time, that interest has grown into a true passion.
People with cancer—and their families—are often exposed to an overwhelming amount of nutrition misinformation. It can be difficult to know what to eat, what to avoid, and which advice to trust. Seeing patients and loved ones feel anxious or discouraged around food is disheartening.
My goal is to help make nutrition feel less confusing and intimidating. I’m here to provide clear, evidence-based guidance, reduce fear around food, and support you through every stage of your cancer treatment journey.
I’m also excited to be pursuing board certification in oncology nutrition in the very near future!

Restrictive diets are commonly pursued by cancer patients hoping that by eliminating certain foods, they can protect themselves from cancer. This is simply not true and will often create a new fear, a fear of food.
While there are studies that link specific foods to cancer risk, the secret isn’t to avoid these specific foods. Instead, it’s how you use it. Together we can build your confidence by taking an “anti-diet” approach and find peace in your life with or after cancer.
